- Stir shredded chicken in with the BBQ sauce until well coated (I cooked my chicken in the crockpot with BBQ sauce, shredded it and then added more BBQ sauce. I thought it turned out really well). Of course you can use less or more sauce, it's up to you! I like quite a bit since I love the smoky flavor of BBQ sauce in a salad.
- Toss together the lettuce, cilantro, corn, beans, and chopped veggies.
- Top with shredded chicken, cheese and crispy tortilla strips.
- Drizzle ranch or cilantro lime dressing over salad and enjoy!

Crockpot Teriyaki Chicken
This is a teriyaki chicken recipe for the crockpot that Kimmy gave me.
1 bag of frozen boneless/skinless chicken thighs or breasts (3 lbs)
In a separate bowl mix with whisk:
1/2 cup soy sauce
1/2 cup ketchup
1/2 cup pineapple juice
little less than 1/2 cup of sugar
1 tsp powder ginger
2 cloves fresh garlic, minced
Place all ingredients in a crock-pot and cook 4-6 hours, or until the chicken is tender. If chicken needs to be shredded further, use whisk or a potato masher. If there is too much liquid, leave the lid off and let it reduce or thicken with a combination of cornstarch and water. Serve over rice.
NOTE: Use more sauce than it calls for! (I only used 4 large chicken breasts with the amount of sauce in the recipe and it was perfect.)

Lemon Teriyaki Chicken
½ cup real lemon juice
½ cup soy sauce
¼ cup sugar
3 Tbsp. brown sugar
2 cloves garlic, minced
¾ tsp. ground ginger
8 chicken thighs or breasts, cooked & cut into bite-sized pieces
Combine all ingredients, except chicken. Cook over medium heat for 3 to 4 minutes. Add chicken and simmer for 30 minutes. Serve over rice.
**** I also add Chinese Hot Mustard and slivered almonds. Very tasty!

Chicken Enchilada Casserole
- 1 lb chicken, cut into small pieces (5-6 chicken breasts) - I season with Montreal Steak Seasoning
- 1 onion, chopped
- 2 Tbs olive oil
- 2 (10 3/4 oz) cans cream of chicken soup
- 1 cup sour cream
- 1 (4 oz) can diced green chilies
- 2 cups grated colby jack cheddar cheese
- 1 (15 oz) package flour tortillas (can use corn tortillas too)
Saute onion with olive oil in large frying pan over medium heat. Add chicken pieces and cook thoroughly. Remove from heat. Stir in soup, sour cream, and chilies. Stack tortillas and cut with sharp knife into thin strips. Add to chicken mixture and mix until coated. In a greased 9x13 pan, layer half of chicken mixture, and half of cheese; and repeat. Bake uncovered for 30 minutes or until golden and bubbly.
Serve with lettuce, tomato, sour cream, guacamole/avacado, tortilla chips and salsa
Express cooking directions: season and bake chicken until cooked. In a large mixing bowl, add soup, sour cream, chilies, diced tortillas, 1 1/2 cups of cheese. Dice up cooked chicken and add to the mixture. Pour into greased 9x13 pan. Sprinkle with remaining cheese and bake 30 min or until golden and bubbly.

Chicken Pot Pie
- 2 small cans cream of chicken soup
- 1/2 cup milk
- 3/4 cup sour cream
- 1 pkg frozen mixed vegetables
- 4-5 chicken breasts (cooked, seasoned with Montreal Steak Seasoning, & diced)
- 1 cup Bisquick
- 1/2 cup milk
- 2 eggs
- 1 cup shredded cheddar cheese
- garlic salt - to taste
- Heat oven to 400 degrees.
- Mix chicken filling ingredients together and pour into greased 9 x13 pan.
- In small bowl, mix crust ingredients until blended. Spoon over chicken mixture and spread as evenly as possible.
- Bake uncovered about 25 minutes or until crust is golden brown.

Chicken Enchilada Soup
1 cup green bell pepper, diced
1 cup onion, diced
1 can (4 oz) chopped green chilies, drained
1 Tbs chili powder
1 tsp cumin
1 1/2 cups monterey jack cheese, shredded
2 (10 3/4 oz) cans of cream of chicken soup
6 cups chicken broth
2 cups diced cooked chicken (2 cans Costco chicken)
about 12 corn tortillas, cut into 1/2 inch strips
1 1/2 cups sour cream
In a 3 quart sauce pan melt butter over medium heat. Add onions and pepper, cook until soft (about 3 min). Add chilies, chili powder and cumin and stir constantly for 2 minutes.
Add chicken soup and broth. Wisk the soup and broth until smooth.
Over medium heat, stir in tortillas, sour cream and cheese. Stir until cheese is melted and sour cream is blended.
Add chicken and heat through.
Remove from heat and serve immediately.
